Besani/Gatte ki Sabji

This is pure and basic recipe of Besani which is use in Bihar and in Rajasthan as Gatte ki sabji and yes am also belongs to Bihar and I like Besani very much, hope you all like this recipe so enjoy .

Serve : 6                                                                              
Ingredients :
·         Gram flour 3 cup
·         Onion 2-3 sliced
·         Fenugreek seed 1 pinch ( 1/8  tsp )
·         Turmeric 1 tsp
·         Salt (as per taste)
·         Bay leaf 2-3
·         Oil 3-4 tbsp (any vegetable oil)
·         Ghee 2 tbsp (1 and ½ tbsp ghee for making dough)

Method :
For Making Dumplings
·         Mix  gram flour, salt, turmeric, ghee(1 and ½ tbsp) in a bowl.
·         Mix it well, now add 2 tsp of masala for gravy to bowl.
·         Now gradually add water and knead smooth dough like chapati dough.
·         Then divide dough into equal portions and make it long like cylindrical shape and thickness around ½ inches.
·         On high flame, Boil water into pan now add cylindrical rolls into it.
·         Cook until they start float on the surface of water around 10-12 minutes.
·         Turn off flame and transfer rolls into plate and keep remaining water for use in gravy.
·         Now cut the rolls one by one, once it done keep aside Besani/Gatte is ready for making sabji now.


For Making Gravy
  •  Heat 3-4 tbsp oil in pan then add fenugreek, bay leaf.
  • At high flame, Add onion and sauté till golden brown, then add Besani/Gatte, salt, turmeric and sauté till fried nicely.
  •  Once it is fried add remaining masala for gravy then sauté till fry nicely.
  • After fried add remaining ghee and stir it well then add remaining water 2 cup (optional if u want gravy otherwise can leave it as it is).
  •  Now your Besani/Gatte ki sabji is ready to serve with chapati.
